The Best Bacon Mushroom Burger - Ever!

Oh, do we have a treat for you today - Deluxe Bacon Burgers!
Seriously, these are the most amazing burgers I have ever had.  These burgers have all of my absolute favorite food combinations - goat cheese, avocado & bacon!

The potatoes take a while, so start them first and do all of your other prep whilst potatoes are baking.

Rosemary Potatoes!
Peel, rinse and slice your potatoes.
Place in roasting pan.
Sprinkle olive oil, chopped rosemary, sea salt and pepper.
Bake at 375 for about 45 minutes or until done


Best Burger Ingredients:

As always, quality ingredients makes all the difference

Grass Fed Organic Beef!  (for however many burgers you need)
Goat Cheese (I adore French goat cheese, French Goats are so chic ;)
Provolone Slices
Onion
Shallots
Sea Salt
Olive or Grapeseed Oil
Mushrooms!  I used dried Oyster & Porcini mushrooms
& fresh portabellas, shitaki and bella mushrooms
Fresh Rosemary stalks
Avocado
Stonyfield Greek Yogurt Aioli Sauce (recipe below)
Annie's BBQ sauce  (optional)

Mix freshly chopped rosemary with your hamburger meat before you make the patties.
Absolutely delish! 

Getting the mushrooms, onions and shallots ready!

Start with dicing your dried mushrooms & rosemary and sauté them in olive oil until a bit tender (about 2 minutes)
Add some fresh ground pepper and sea salt to taste! (I use loads ;)
Add your Shallots, Onions and Fresh Mushrooms and continue to sauté.
When they are done, keep on low heat until burgers are ready.  I use my made in France - Cuisinart French pans which are by far my favorite pans I have ever used!
Makin Bacon!  This hickory smoked bacon will tempt your senses as soon as you open the package.  Smells amazing!

Grill your burgers.  Top with Applegate Hickory Smoked Bacon, provolone cheese, goat cheese, your mushroom mix, avocado & add Stonyfield Greek Yogurt Aioli Sauce (recipe below)
Add a dollop of Annie's BBQ for your rosemary potato fries or the Aioli Sauce is amazing with fries!!
Outstanding Greek Yogurt Aioli Sauce!

Ingredients:

1 small carton of Stonyfield Greek Yogurt Plain
1 large/medium organic lemon (using zest & juice)
3 Cloves of Garlic (smaller)
Raw Wild Honey
Pink Himalayan Sea Salt
Ground Pepper

Mince your garlic super small.  Mix Garlic,  Greek Yogurt, Juice from half of your lemon, 3 teas of lemon zest, 2 heaping teas of Raw Honey, Sea Salt and Ground Pepper to taste (I use loads!)

Cooking is subjective to personal taste so taste and add additional amounts of your preference.

Rinse your little branch of fresh rosemary in hot water before you chop! You get twice the flavor & smells delish!
