Coconut Chocolate Cookies

These go so nicely with the Pineapple Chicken Wraps I posted about  a week ago!

 
Yes, I know. I need to work on my photography skills ;)

2 cups whole wheat flour
1 tsp baking soda
2 sticks softened organic unsalted butter
1/2 cup organic sugar
1/2 cup dark brown sugar (packed)
2 tsp. pure vanilla extract
2 lg. organic brown eggs
1/2 cup organic  unsweetened coconut
1 bar of 70 or 80% cocoa chocolate bar






Set oven at 350 degrees
Mix soften butter, sugars and vanilla in stand mixer.  Add eggs.
Mix flour and baking soda in bowl and then add to mixer.
Mix in unsweetened coconut.
Run cocoa bar through a food processor for a second (to make bits) and then add to mixture.
Drop balls of dough on to cookie sheet (I use stoneware).  Bake for about 8 minutes.
Cool and Enjoy!
