black beans and rice

This is so great for Meatless Mondays and it is my teenager's favourite!! It is also VERY easy!
If you don't want to make the black beans from scratch, use canned. And instead of me writing organic on everything, everything but the Margaritaville salsa was organic. :)
3 cans (about 5-6 cups) black beans
3 cups rice
olive oil
fennel seeds
sage
rosemary
fresh chopped garlic
4 stalks of celery
1 medium onion
avocado
organic blue corn flax seed tort chips
Margaritaville salsa
Optional - corn and/or pineapple
Cook rice according to package (mine took about 20 minutes).
On medium heat, heat the olive oil and all spices, add chopped celery and onion (keep a little onion out for topping). The amount of spice you use, is really according to your taste. We like things a little spicier than average I think. I used about 2 teas. of fennel seeds, 2 pinches of sage and rosemary and 2 teas. of garlic.
While everything is cooking, slice your avocado. Top with avocado, salsa, chips & onion.
Add optional corn and/or pineapple.
Very fast and easy, but very healthy dinner! Let me know how you like it! :)
