Arugula Pizza and Disney Channel Movie Night!

This week we are excited and getting ready for the premier of Disney Channel's Teen Beach Movie!  We made a surf board arugula pizza and we are ready for movie night - Beach Style!

Pineapple, goat cheese, bacon, arugula, red onions & blueberry greek yogurt pizza sauce! 

Ingredients:
8 slices of bacon
2 cans of wild caught sardines
Arugula
4 oz of cream cheese
2-3 oz of Organic Greek Yogurt
3/4 cups of wild organic frozen blueberries
Red Onion
Freshly Sliced PIneapple (however much you like & put extras in a side bowl to snack on)
Your choices in cheeses - for this I used an absolutely amazing mixture of Capricho Sheeps Milk Cheese, Murcia Raw Goat Milk Cheese,  Mitica Sheeps Milk Cheese - up to 3 cups total


Choose fabulous organic arugula for your pizza - I buy Earthbound Farms Organic Arugula (& all their products for that-matter) as often as possible!  


Blue Corn Organic Chips & Black Bean Dip with Stonyfield Greek Yogurt & 
Watermelon is fabulous together!  

We shape the dough before we make it - Surf Board Style! 

Fresh Watermelon - ball watermelon & place back in the watermelon "bowl"!

This is the second pizza...going, going, gone! 

Cooking the Pizza -

Cook your bacon & heat 2 cans of wild caught sardines & let cool off.

I use Immaculate Pie Crust and bake about 8 minutes until done.

You may shape the dough into a surf board shape before or after you cook it.  It worked both ways.

While your crust is baking - heat 3/4 cups of frozen organic wild blueberries

When they are heated & warm add to 4 oz of organic cream cheese & 2 oz of Organic Greek Yogurt.  Start slowly and keep adding until you get the color you want.  It all tastes fabulous.  It comes out purple.  I am not sure why but, I had it in my head that the blueberries would actually come out blue.  They did not.

Take your baked crust and add the desired amount of the cream cheese mixture
Top with arugula - I use about 1 1/2 cups per pizza

Sprinkle your cheeses (about 1 1/2 cups per pizza)

Top with red onion, pineapple tiny fresh slices, sardines, bacon, fresh ground pepper and sea salt.  Bake for another 5 - 8 minutes or until done.
