If you read little island studios often, you know that I am all about cooking, baking and healthy food!  I just love Carbonell Olive Oil from Spain  - in my opinion (and wonderful chefs around the world) Spain has the best olive oil!   I use olive oil daily in my cooking as well as baking (and I have to let you in on a little secret...it makes for a wonderful moisturizer, especially during the winter!)

Daring Pecan Spice Pancake Ingredients - 

2 Cups of Organic Spelt Flour
1/2 cup of Brown Sugar
1 tablespoon of sugar
1 tbs Cinnamon
1 teas of Nutmeg
1/2 teas of Ginger
Dash of freshly ground cloves
2 teas of Baking Powder
1 1/3 Cup of Organic Whole Milk
2 Eggs
3/4 Cups of Pecans (chopped) & a bit extra for sprinkling 
1/2 Cup of Carbonell Olive Oil (Classic or Extra Light Carbonell Olive Oil works for this recipe) and extra Olive Oil for cooking the pancakes!
1 teas of Pure Vanilla

Mix all of the wet ingredients in mixing bowl.  Mix all of the dry ingredients into bowl, then add to wet ingredients.
Mix until well blended.
In a medium heat - preheated skillet (iron skillet is excellent for pancakes) add about 2 tablespoons of Carbonell Olive Oil.
Add desired sized dollops of batter into pan.  (do you want tiny pancakes?)
Cook about 2 minutes and flip over.  When done place on warm plate and keep in oven on low heat.
Add more Carbonell Olive Oil as needed as you complete entire batter bowl.
Add organic unsalted real butter, pure maple syrup, a sprinkle of crushed pecans and a little bit of powdered sugar (you know, because it looks like snow) and a glass of coconut or whole milk and voila....daring brunch perfection!
Serve warm and Enjoy! 

If you are feeling like some extra decadence, try making homemade fresh whipped cream!  No, not the nasty stuff in the tub.  Save some extra batter and make a quick batch at night with some Organic Frozen Yogurt for an absolutely delicious dessert!

Whipped Cream - 

8 oz. Organic Heavy Cream (should only have one ingredient...please skip any additives)
1 Teas of Cinnamon and 1/2 Teas of Nutmeg 
2 Teas of Pure Maple Syrup

Whip on high with mixer.  Stop mixing when it looks well fluffed.  Too much mixing is not good ;D
