Mediterranean Lentil Soup!

Don't you just love winter?  Snuggling by a fire, cozy blankie, movie and a warm bowl of hearty delicious soup.

Lentil soup with farm fresh carrots, organic spices and grass-fed beef - makes all the difference.


Saute carrots with olive oil and fresh rosemary.

Ingredients - 

2 Cups of Chopped Farm Fresh Organic Carrots (look for a variety in colors, if available)
2 Pounds of Grass Fed Organic Beef (well worth the money, 1 pound is just fine if you would rather)
Sea Salt and Fresh Ground Pepper to taste
Olive Oil (we like Olive Oil from Spain)
2 Teas of Cumin
2 Teas of Turmeric
2+ Tablespoons of Chili Powder (add more to taste)
Balsamic Vinegar (1-2 tablespoons)
15 oz. Red Lentils
28 oz of Organic Tomatoes diced
32 oz. Organic Vegetable Broth (plus more if needed)


Saute carrots in olive oil, Balsamic Vinegar, sea salt, pepper.  Set aside.
Brown your beef. Set aside.
Bring to boil your vegetable stock then add in your lentils.  Turn heat down to low and Cook until tender. 
Add in your tomatoes, beef and carrots and spices.
Simmer on medium / low heat, lid on, for at least 30 minutes, to let all of the flavors combine.  Stir occasionally.   If needed - add a bit of water or more veggie broth. 

Enjoy!



Add a dollop of Organic Greek Yogurt on top of your soup for a bit of twang.   We use Stonyfield (whether you use Stonyfield or not, please choose organic dairy products - the hormones, pesticides and GMOs in "regular" dairy is doing nor you or planet earth any favors.)

My Notes:

I buy organic ingredients and preferably from my local organic farm, when possible.

I use most Simply Organic Spices (affordable and tastes great)

Don't be afraid of introducing new foods to your family!  Every week try a new dish.  Get the kids involved choosing and cooking - talk about where your food really comes from and all of the health benefits of it.  Getting kids cooking is one of the most important things you can do for their future health!
