Spiced Walnut Banana Bread!

Don't you just love the smell of banana bread baking?  This recipe has Saigon cinnamon, nutmeg and a bit of ginger and is the ultimate comfort food.  Full of healthy medjool dates, walnuts and of course, bananas and topped with sweet chocolate and extra cinnamon.  It is such a great comfort food as we wait (patiently) for spring to finally arrive!  If you follow little island studios on Instagram, you may remember that I sometimes make this at night, for the pleasure of having it with my morning coffee! 

Can you smell it? So yummy!

I use If You Care unbleached parchment paper!


2 Cups All Purpose Flour (unbromated
4 teas Saigon Cinnamon (plus extra for topping below)
2 teas nutmeg
1 teas ginger
2 teas baking powder

1 cup chopped medjool dates
1 cup chopped walnuts (medium sized)

6 oz melted butter
4 bananas small/medium smashed

2 Eggs
3/4 Brown Sugar

 1/2 Cup Mini Chocolate Chips
1 Tbs Maple Syrup
1/4 cup chopped walnuts
and a bit of extra sprinkled cinnamon

Preheat oven on 350 Degrees.
Melt your butter and then set aside
Mix your eggs and sugar together in Mixing Bowl.
Pour in mashed bananas.
Mix your flour, baking powder, spices in bowl.
Pour dry ingredients into wet ingredients and continue to mix, just until blended.
Pour in melted butter.
Add Walnuts and Dates - Mix just until blended.

Line your baking bread pan in unbleached parchment (you don't have to use parchment, it just makes it super easy to take out)
Pour your batter into pan.
Then add the toppings one at a time - chocolate chips, walnuts, maple syrup and finish off with the cinnamon! (just leave topping, don't stir)

Bake for 35 minutes or until done

Cool and Enjoy. 

I love to make this at night and leave it to cool and enjoy it in the morning with some amazing fair trade, organic coffee!  Delish!

I am thrilled to see that you are using Saigon cinnamon. While the cinnamon found on the shelves can be organic, it's not real cinnamon. Real cinnamon can have many health benefits.

Yes! We love Ceylon Cinnamon!
