Cheesy Cilantro & Tomato Quesadillas With Greek Yogurt Chipotle Sauce!

Cheesy Cilantro & Tomato Quesadilla with Greek Yogurt Chipotle Sauce is one of our new favorite lunches and so very easy - and if you follow little island studios on Instagram, you already know, it's awesome!

Place one tort in skillet with olive oil.  Top with all of your yummies.  Spread Greek Yogurt Chipotle Sauce on another tort and place onto of tort in pan.  

Ingredients - 

8 Flour Tortillas
1 1/2 Cups Cilantro (tear into smaller bits)
1 Heaping Cup Heirloom Cherry Tomatoes - sliced
3/4 Cup Green Onions - chopped
Sea Salt
Pepper (freshly grounded)
1 3/4 Cups Sliced Raw Sharp Cheddar Cheese (I used Organic Valley)
Olive Oil for Cooking

Organic Greek Yogurt (I use Stonyfield)
Sir Kensington Chipotle Mayo
Mild Salsa

Sauce - 
Mix 3/4 cup of Organic Greek Yogurt, 1 heaping tbs of salsa & 1 heaping tbs of Chipotle Mayo together and set aside for torts.

Chop your cilantro, tomatoes, onions and cheese - place into separate bowls.

Heat your skillet at medium heat.  Add a glub of olive oil.  Place one tort on skillet and top with desired amount of cilantro, cheese, onions and tomatoes and fresh ground pepper and sea salt.
Spread Greek Yogurt Chipotle Sauce on another tort and place down onto of loaded tort in pan.  Flip tort when lightly browned and cook until done.
Place on clean plate and slice into desired pieces.
We like a bit of extra sauce on the side for chips and dipping!

Medjool dates, fresh organic strawberries, organic blue corn chips and a bit of extra Greek Yogurt Chipotle Sauce to dip makes such an easy lunch that your kids will have so much fun helping you make (age appropriate, of course).

I buy only organic and/or Non GMO ingredients.
If you are just starting reading labels and eating healthier and cleaner.  Start with dairy - organic dairy and meats they are so important.  I choose not to buy dairy ingredients where the cows have been eating GMO feed!
I am a Stonyfield Blogger, so I happily buy Stonyfield.  But, whether you buy Stonyfield or not - look for organic yogurts and if you buy local, ask your farmer what exactly the cows are eating!  Get involved, it's your body - you should know what is going in it!
