Breakfast Bliss - Oats, Caramelized Pecans & Mangoes!
Thank you for stopping by little island studios, please subscribe by email to follow along in family fun!
Coconut oil can be used instead of butter, but I preferred the taste of the grass fed butter.
I use organic, fair trade and Verified Non-GMO products as often as possible!
This is easily, the most I have ever enjoyed oatmeal - and I mean thoroughly enjoyed! This bowl of oats is so completely amazing and sweet it's hard to believe there is zero sugar! Organic, gluten free and full of raw nuts and fresh mangos - good gracious!
This breakfast uses only one pot and you have the perfect breakfast! I have to say, I am completely obsessed with my new grey cast iron pan from Williams Sonoma! After drooling over it for simply months, it finally went on clearance (& after waiting for the 30% OFF the clearance) we are together!
Yes, I'm obsessed with it!
Obviously any fresh fruit is amazing! (and walnuts work if you are out of pecans!)
Ingredients:
Oats - Regular Irish Oats or Purely Elizabeth has Organic Ancient Grain Oatmeal (incredible!)
Grass fed butter (or coconut oil if preferred) - 2 tablespoons per cup of oats
Ceylon Cinnamon - 2-3 teas. (as desired)
Pinch of Nutmeg
Raw Pecans
( 1/2 cup for every cup of oats you make)
Fresh Mango - or your choice of fresh fruit (I have to say though, they mango is divine!)
Cook:
Using one pan, heat your butter on medium heat. When the butter starts to melt, add 2 teas of Ceylon Cinnamon and a pinch of nutmeg. When the butter starts to stick to the pecans and caramelize, stir and place in bowl.
Add water to the pan of desired amount for your breakfast.
Make oats according to directions and desired amount.
Spoon hot oats into clean bowl.
Spoon your pecan mixture on top.
Add fresh fruit and another sprinkle of Ceylon Cinnamon.
Thoroughly Enjoy!
My Notes:
Coconut oil can be used instead of butter, but I preferred the taste of the grass fed butter.

Happy Breakfast, lovelies!
