Valentine's Day Chocolate Cupcakes & Strawberry Frosting!

We are completely obsessed lately with everything red, pink, hearts and everything Valentine's Day!  LOVE!   I have been working on a cupcake recipe with gluten free sprouted flour, low sugar and absolutely delicious - this is it!   I see these recipes with just as much sugar than flour and I have to wonder - whhyyy?  There is no need to fill your dessert with sugar - chocolate and strawberries are sweet enough!   Besides there is plenty of sugar in the frosting, you control how much you add.  These tiny cupcakes are kid sized and perfect for Valentine's Day!  

Let the little ones help putting the muffin papers in and decorating the cupcakes!
It's not about perfect looking cupcakes, it's about them and enjoying time with you in the kitchen!  (see our Instagram)



Ingredients:
6 oz. of grass fed butter (salted or unsalted is fine)
3/4 cup of cocoa

1/4 cocoa
1 1/2 cups of sprouted oat flour (it's amazing & gluten free)
1 teas. baking powder
1 teas. Ceylon cinnamon
1/4 cup of brown sugar 

2 eggs
5 oz. cup Stonyfield Greek Plain Yogurt 
2 oz.  whole milk


Melt butter and the 3/4 cocoa.  Set aside to cool down.
Mix the 1/4 cocoa, flour, baking powder, Ceylon cinnamon in mixing bowl.
Mix  Stonyfield Greek Yogurt, eggs, sugar and whole milk in separate bowl.
Add wet mixture into dry and keep mixer on low.
Add in the melted butter and chocolate mixture.
Mix until well-blended.
Drop batter into cupcake liners about 3/4 full. 
(I always us unbleached If You Care parchment)

Bake in preheated oven 350 degrees for 16 minutes (or until done)
Let cool then frost!



Frosting:
4 oz of cream cheese
1 tbs of Stonyfield Greek Yogurt (you can add a bit more if needed)
1 1/2 cups of powered sugar
1/2 cup of fresh strawberries & extras to top with

with a hand blender or even with a fork - mash up 1/2 strawberries (pour any liquid in a bowl)

Mix well - cream cheese and powered sugar, adding any extra sugar for desired thickness.
Add in the mashed strawberries.
Mix until well blended and your frosting is pink.

Frost cupcakes and add sliced strawberries, if desired.




Extra fresh strawberries for topping!  They're tiny and so much fun!

I buy organic ingredients.  Organic food is without GMOs and synthetic pesticides.  Organic, Fair Trade and Verified Non-GMO labels are extremely important for me and my kid's healthy futures!  If you are not aware of the dangers of GMOs, please educate yourself on what is in your food and what is being done to it.  Food safety and real food is more important than ever before.
