Lemon Garlic Potatoes!

We made these lemony garlic potatoes the other night and they are completely dreamy!  The secret?  Well, in my opinion, lemons make every thing spectacular, however, roasting the potatoes in red palm oil makes all the difference.


Potatoes (I make a whole bag)
Sea Salt (I use Simply Organic)
Lemon (unsprayed and organic)
Freshly chopped garlic
Nutiva Red Palm Oil

Salmon burger, lemon garlic potatoes, avocado, mango and french mustard - bliss! 

Preheat oven to 350 degrees.  Peel and slice your potatoes.  Chop garlic (about 4-5 cloves, finely chopped).  Place in pan - I also use unbleached parchment paper.  Sprinkle sea salt and pepper (I use loads).  Squeeze lemon over the potatoes.  (leave the lemon in pan, if desired). Pour red palm oil over the potatoes (about 1 / 2 cup)

Roast until done and enjoy, enjoy, enjoy!!
