Strawberry Gluten-Free Waffles, Please!

My lovely husband brought me home a gorgeous reclaimed wood picnic table a few weeks ago and I'm slightly obsessed with it! I linger long after breakfast is over, enjoying my coffee, listening to the wind and the spring birds and just breathing the fresh air. It is what spring is all about. I also happen to be a bit over-the-moon with my new waffle maker…I dream about waffles covered in blueberries and pecans with bananas and strawberries. Oh, the strawberries! Strawberries are in season and it reminds me why we are meant to eat in season - the taste! Strawberries taste totally different this time of year - soft, juicy, small and boasting with flavor - the way it is supposed to be - organic!

Breakfast is to be celebrated - a spectacular way to start the day! Gloriously beginnings and obviously organic, fair trade coffee works swimmingly. I'm slightly addicted to TOMS Roasted Coffee (if you follow me on Instagram, you already know!)
Don't you just LOVE strawberry season? Organic, of course!
Ingredients:
Coconut Oil - 4 tbs
Eggs 2
Oat Flour - 2 cups (gluten free)
Baking Powder - 2 teas (no aluminum)
Vanilla - 1 teas
Vietnamese Cinnamon - 2 teas
Buttermilk - 1 cup
Whole Grass-Fed Milk - 1 cup
Sugar - 2 tbs (I use raw organic)
Optional:
Strawberries - 1/2 of fresh diced with extras for topping
Mini Chocolate Chips - 5 oz (I say this is optional, but really it's a necessity at our house!)
Extra Coconut Oil for the Waffle Gridle
Mix your ingredients gently and well.
Heat your waffle maker.
Brush generously coconut oil - unrefined and organic. I have found coconut oil to work the best, but your choice.
Cook accordingly to waffle machine directions.
Top your waffles with grass fed butter, real maple syrup, only not too much, as they are already deliciously sweet and fresh strawberries or any other seasonal fruit!

I buy Vital Farm eggs when I'm not close to my favorite organic free range farm.

I use Nutiva unrefined and organic coconut oil.
Strawberries are heavily sprayed with chemicals, so choose organic or even better - grow your own!
