Cooking Spiralized Beets for Dinner!


I am most happy to collaborate with Cuisinart on this post. 

It's autumn and one of my favorite warm comfort foods is root veggies with a bit of olive oil and sea salt.  It's simple and completely satisfying, not to mention extremely healthy.



I was making this a few weeks ago when a friend of my oldest was home from college stopped by.  After he said he didn't like beets - I smiled and handed him a bowl of these spiralized beets with olive oil and sea salt.  He couldn't believe they were beets!  He ate the whole bowl full and asked for seconds.  He's asked for the recipe and bought a spiraizer for these alone!  

Use the Cuisinart Spiralizer to spiralize the beets - I do about eight beets per dish.


Ingredients Matter - Choose organic and farm fresh!


Yellow beets are the prettiest - don't you think?!

Peel beets
Spiralize 
Heat your iron skillet to medium heat.
Add a glub of olive oil.
Add your spiralized beets and sea salt to taste.
Cook and occasionally stir for about 2 minutes.
Taste, Tweak and Enjoy!


My Notes:

Ingredients matter.  As always, I choose organic and Non-GMO foods.
When at the farmers market, seek out the organic farmers and/or NO chemical at all farmers!
I use Simply Organic and Frontier Co-op Spices - Non-Irradiated, Fairly Traded and simply the best spices I buy!
I use olive oil or even coconut oil.  Never use canola oil - it is most certainly GMO and even if it's not...no real nutritional value.  And why bother if it is not going to nourish your family?
