Vanilla & Cardamon Rice Crispy Treats!


The other day I realized my little one had never had rice crispy treats!  How did that happen?  I do not want the kids having treats or anything else that is full of corn syrup, colorings and GMOs and so in the process had skipped a kid favorite treat! 

I looked up so many recipes for them and really it is just marshmallows, butter and rice cereal.  Well, I bought my favorite rice cereal and non-GMO marshmallows and yummy grass fed butter.  I wanted something a bit different and added cardamon and vanilla and oh, my goodness gracious - YUMMM!   These rice crispy treats are by far the best ones I have ever had and the spice makes it okay for grown ups to indulge for the holiday season too!  Please follow our Instagram for InstaStories for fun recipes and ideas! 

After slicing store the treats in air tight containers to enjoy for 2-3 days!  As if they would last that long in my house! 

We use unbleached parchment paper to line the cookie sheet with.
No mess and no chemicals leaching into foods. ...but mostly no mess!
Cool at room temperature. 
Slice into squares or even use cookie cutters for fun festive shapes!

Ingredients -

3 oz. Grass fed butter - we use Kerrygold
1 heaping tablespoon Coconut Oil - Barleans Organic Culinary 
5 1/2 cups Rice cereal - we use Erewhon Cereal
1 1/2 teas. Vanilla - Frontier Co-op Organic Spices
1 teas Cardamon (we like more than less cardamon) - Frontier Co-op
12 oz. Mini Marshmallows - Dandie Marshmallows are non-GMO

Heat dutch oven or sauce pan to medium low heat.
Add 1 heaping tablespoon of coconut oil.
Stir around melting coconut oil.
Add in and melt the butter
When butter is almost melted - Add in the vanilla and cardamon. 
Stir. 
Add in the marshmallows.
Stir.
Stir.
Stir.
Stir some more.
When just melted add in the rice and continue stirring until mixed well.

You can always add in more butter or a bit more rice, if needed.

When all mixed together pull off heat immediately.
Spread into a lined rimmed cookie sheet or jelly roll pan.

Allow to cool room temp.

Slice and enjoy! 

Have the kids help!  If they do 2 or 3 shakes of the cardamon then that is good!  If they spill the vanilla a little, then the more the vanilla the merrier!  It doesn't have to be perfect!  If they want to add mini marshmallows on top after you spread it out on the the pan, then let them!  It will be pretty and extra marshmallows are always a good thing.  
This is super easy and fun to do.  The kids will have fun measuring, staring, spreading and even slicing the treats.  Something for every age appropriateness!
