Sunny Mandarin Orange Cakes & Frosting On Top!

Have you seen our Instagram Stories this week? We have been baking up a storm with delicious mandarin cakes and simple homemade frosting made with Sunrays juicy easy-to-peel mandarins. Mandarins are quite simply the perfect snack - they are totally portable and they come prepackaged in nature's protective peel! Sunrays mandarins are snacks I feel good about buying my family and do so every week. Sunrays are non-GMO and full of sweet goodness that we love!
We made mandarin cakes with super simple frosting on top!
Ingredients -
Spelt Flour - 1 1/2 cup
Oat Flour - 1/2 cup
Baking Powder - 2 teas
Ceylon Cinnamon - 2 teas
Sugar - 2/3 cup
Grass Fed Greek Yogurt - Plain with no sugar 3/4 cup
Eggs - 3
Mandarin Juice - Freshly Squeezed 1/2 cup
Coconut Oil - 2 heaping tbs
Cashew Milk - 1/4 cup
Bake -
Preheat oven to 350 degrees
Mix Sugar, Eggs, Coconut Oil & Yogurt together
Mix dry ingredients in separate bowl
Add in dry ingredients to wet bowl and mix slowly
Add in the cashew milk
Add in the mandarin juice
Add a touch more of cashew milk, if needed
Pour batter 3/4 full into muffin cups.
Bake at 350 20-25 minutes or until done.
Cool completely and Frost!
Frosting -
A stick and a half of grass fed butter.
Powdered sugar - 2 cups
2 tablespoons of freshly squeezed mandarin juice
Mix together on medium-high about 4 minutes.
Add in a touch of sugar or juice, as needed to make the most delicious icing you've made this year!
